Corn, Avocado, and Tomato Salad

2 ears corn, cut off cob
1 avocado, diced
1 pint cherry tomatoes, halved
½ Cup Diced Red Onion
1 lime
2 Tbspn. Olive Oil
¼ Cup Chopped Cilantro
Salt & Pepper to taste

Mix corn, avocado, tomatoes, and onion.
Grate lime zest. Squeeze lime.
Mix olive oil, lime zest and juice, cilantro, salt & pepper.
Pour over vegetables & serve.

Wicked good salad! Best salad I ever had - and the home-grown veggies made it even bettah.
