Whole Wheat Zucchini Bread



3 Eggs
¾ C. Vegetable Oil
1 1/4 C. Brown Sugar
½ tsp. Orange Extract
¼ tsp. Vanilla Extract
2 C. Grated Zucchini
2 ½ C. Whole Wheat Flour
¾ tsp. Salt
¼ tsp. Cinnamon
¼ tsp. Ginger
1 tsp. Baking Soda
2 tsp. Baking Powder
½ C. Chopped Walnuts or Pecans
¾ C. Raisins

Beat eggs. Add the oil and sugar, beating well. Add the Orange and Vanilla extracts, and zucchini, mixing well.

Combine the dry ingredients. Add to the wet ingredients. Add the walnuts and Raisins. Bake at 350 degrees for 45-60 minutes.

Notes: This recipe is great to make when you are over-run with zucchini in your garden
